The Chef

Perseverance and hard work are the essence of cooking. An education acquired in 1988 from Consuelo Castell of Can Turnay in the Valle de Arán, his contact with the profession after his studies at the Advanced Hotel-Restaurant School of Donostia-San Sebastian.
It was his trial by fire in his dedication to the stoves which continues to the present day.
He then worked in emblematic houses such as Chalcha in Eibar, Príncipe de Viana in Madrid, Koldo Royo in Palma de Mallorca, etc.
In the Historical City Centre of Hondarribia, he entered the door of one of the most welcoming restaurants that he had ever visited and he was seduced by Sebastian where he practices his maxim to offer an experience, which consists of fifty percent of excellent cuisine and product and the other fifty percent is represented by the cosy atmosphere of the dining room which enhances the enjoyment of the diner.
